TASTING NOTE

Wine of high layer and purple coloration with purple reflections. A quiet glass gives us fruity aromas, product of its varieties, like raspberries and cherries on a smoky background and with spices. In shaken glass shows us its complexity with its own aromas of its long passage in barrel like tobacco and cacao. In the mouth its attack is slightly sweet, just acidity and velvety tannins that give a subtle structure to it. Long end and very good memory in the mouth. Ideal pairing of red meats and lamb. Also perfect as a last wine of a dinner, accompanied by a Havana.

VINIFICATION

This wine is obtained from a selection of barrels of Tannat, Merlot and Tempranillo. Separate vinification of the three varieties, with manual selection of the grapes, berry by berry.Fermentation at 26ºC, with 2 daily pumpingovers and post maceration with 1 daily pigeage.
Maceration time 15 days, depending on the vinification of each plot. Separately aging of the three varieties between 9 and 14 months, depending on the variety, in French and American oak barrels.
